And now for some Lazy Pad Thai



Here’s the recipe!


You’ll Need

4 ounces dried wide rice noodles
2 tablespoons peanut butter
1/2 cup coconut milk
1 teaspoon red pepper flakes
4 shakes hot sauce
1-inch piece fresh ginger, peeled
2 cloves garlic
1 sprig parsley

Now What

1. Boil 2 cups water in a medium saucepan. Add the rice noodles and cook for 5 minutes.

2. Strain and set aside.

3. Blend the peanut butter, coconut milk, red pepper flakes, hot sauce, ginger, garlic, and parsley until smooth.

4. Add the peanut sauce to the rice noodles, and stir until everything is evenly dispersed.
