Olive Guacamole

Last night was a guacamole revolution. I was pretty confident about this home invented recipe included in my new book Make Your Own Rules Cookbook, but having only shared it with a few friends and family, I had no idea it would be THIS well received at last night’s pre-launch celebration. Our good friend, Jason Wachob, CEO of mindbodygreen and certified guac critic, said it’s his favorite guac EVER. It’s a good cookbook launch party when all the food is gone before the night is over. The gang gobbled up my olive guac, lazy pad thai, vieques salad, apango tango smoothie, and most endearing my chickie-grandma’s cookies. No crumb left behind.

Olive Guacamole

Using olive juice revealed itself to me one day when I had more olives than avocados, a craving for hearty guac, and a creative spark. I always dish out extra olive juice when I pick up lives at the market to use in dressings, over quinoa, and now of course in combo with the world’s greatest guac.

Whip it up for your home and let me know if it starts a revolution where you are!

Serves 3

2 avocados
1/2 cup chopped onion
1/2 cup mixed green and black olives, chopped
1/4 cup olive juice
1/2 tomato, diced
2 cloves garlic, minced
4 shakes hot sauce
1 teaspoon red pepper flakes
1 teaspoon chili flakes
Juice of 1/2 lemon
Juice of 1/2 lime

Mash the avocados with a fork in a small bowl, and stir in the onion, olives, olive juice, tomato, garlic, hot sauce, and spices.

Toss in the lemon and lime juices, and mash them in with a fork.
