When I was a kid my cousin Shelah and I would make sinckerdoodles every time we got to hang out. It was our tradition. We were kids so our job was limited to rolling the cookie dough into balls, and my favorite part, rolling the little nuggets into a bowl of cinnamon and sugar.
Snickerdoodles contain a lot of butter and sugar and other not-so-good-to-eat-tons-of ingredients, but I’m not about to give up my love of making and eating them that easily. I found a non-dairy, healthier recipe that tastes just as good as I remember they did in my cousin’s kitchen. Try out the recipe and let me know how you like my favorite cookies!
You’ll Need
1 ¾ cup all-purpose flour
¼ cup cornstarch
1 tsp. baking powder
1 stick (4 oz.) earth balance butter – sick
¾ cup sugar
¼ cup vanilla almond milk
1 tsp. vanilla extract
Cinnamon Sugar
½ cup sugar
3 Tbs. ground cinnamon
Now What
Wisk flour, cornstarch, and baking powder in bowl
Beat together earth balance and sugar until smooth
Beat in almond milk and van extract until smooth
Add dry ingredients. Beat until smooth
Roll in little balls.
Cover in cinnamon and sugar (combined)
Place on baking sheet
Bake at 350 for 15-20 minutes
Let cool and Enjoy!
